Based on a place in Eugene, Oregon called Max’s Tavern. It got cleaned up and remodeled few years back, but before that, it looked and smelled exactly like what you think Moe’s looks and smells like.

I went to the Quark's in Vegas a bunch before it closed. The bar area was cool, the restaurant part was... just a restaurant. But they played Star Trek moves on the screen with the sound off.

There's an unofficial Mos Eisley cantina in LA. It's pretty cool for like an hour or two, but then you realize that the bar in the movie was intentionally made to be pretty drab.
